Ingredients
- 12 pitted dates
- 8 figs
- 1 Tbsp good quality cacao
- 1/3 cup walnuts
- 1/3 cup almonds
- 20-30mls fresh orange juice
- 1 tsp orange rind
- shredded coconut for rolling
Method
- Add shredded coconut to a plate and set as side.
- Add all remaining ingredients into food processor.
- Blend together until a dough like consistency forms.
- Using a tablespoon scoop mixture onto wet fingertip and roll into snack-sized balls.
- Place balls onto shredded coconut and roll to cover.
- Add to airtight container & place in fridge.
- Keep refrigerated up to 5 days.
