Hearty Minestrone Soup

Ingredients

 
  • 1 medium brown onion, chopped
  • 1 clove garlic, crushed
  • 400g can cherry tomatoes
  • 1 carrot, peeled and diced
  • 2 sticks celery, sliced
  • 1 large potato, peeled and diced
  • 1 tablespoon tomato paste
  • 1 bay leaf 
  • 4 cups beef stock
  • 2 cups water
  • ½ cup small pasta
  • 1 cup fresh spinach
  • 1 can kidney beans, rinsed and drained
  • crusty bread and grated cheese

Method

  1. Cook onion and garlic in a large pot with a little water until onion is translucent.
  2. Add tomato, carrot, celery, parsnip, tomato paste, bay leaf, beef stock and water. Bring to the boil, add the pasta and simmer for 15 minutes or until tender.
  3. Add fresh spinach and beans. Cook for a further 5 minutes.
  4. Serve with crusty bread or toast, plus a sprinkling of grated cheese. 

Serves 6 

A wholesome soup for filling you during winter! Alternatives could include using four bean mix, adding a cup of cabbage or topping with shredded chicken.
