Ingredients
- 1 slice of pineapple
- 2 slices of tomato
- 1 mushroom
- 1 slice of capsicum
- 2 slices of wholegrain bread
- 2 tsp salt reduced tomato paste
- ¼ cup grated mozzarella cheese
- Extra virgin olive oil spray
Method
- Dice pineapple, tomato, mushroom and capsicum
- Spread tomato paste on each slice of bread
- Top your bread with the pineapple, tomato, mushroom and capsicum
- Cover with your mozzarella cheese and add your bread other slice of bread to top off your sandwich
- Spray the surface of your sandwich with oil
- Add your sandwich to your preheated sandwich or jaffle press and close.
- Remove your sandwich when golden brown.
- Allow to cool before cutting and placing into lunchbox.
