Ingredients
- 1½ cups natural muesli
- 1 cup wholemeal self-raising flour
- ½ cup sugar
- 1 large green apple, grated
- 1 cup grated carrot
- ½ cup sultanas
- ½ cup pecans or other nuts, chopped
- 2 eggs, beaten
- ⅓ cup oil
- 1 cup low fat milk or milk alternative
Method
- Place muesli, sifted flour, sugar, carrot, apple, sultanas and pecans into a bowl.
- Combine eggs, oil and low fat milk (or milk alternative) in separate bowl.
- Add liquid ingredients to dry ingredients and mix gently until just combined.
- Spoon mixture into three trays of 12 hole mini muffin tins or mini patty cases (or 24 regular patty cases).
- Bake at 190 C for 25 minutes for mini muffins, or 30 minutes for the patty-cake sized muffins.
