Strawberry Breakfast Sundae

A refreshing sweet breakfast sundae to get you started for the day.

Ingredients

  • ¼ cup almonds
  • ¼ cup walnuts
  • ½ teaspoon ground cinnamon
  • 4 fresh pitted Medjool dates
  • 500g strawberries
  • ¼ cup chia seeds
  • 800g reduced-fat natural or Greek yoghurt

Method

  1. Add almonds, walnuts, cinnamon and 2 dates to food processor and process until
    you have a sticky-crumble like consistency.
  2. Cut half of the strawberries into quarters.
  3. Blend the other half of the strawberries with the other 2 fresh dates and chia seeds with a stick blender until smooth.
  4. Divide cut strawberries into 4 glasses, topping with yoghurt, and spoon on  strawberry puree.
  5. Sprinkle crumb mixture on top. 

Tip:
If you don’t have a food processor, you can chop by hand until a consistency you’d enjoy.
