Ingredients
- 2 tablespoons olive oil
- 1/3 cup sugar
- 2 eggs
- 4 soft bananas, mashed
- 1 cup self-raising flour
- 1 cup wholemeal self-raising flour
- ½ cup reduced-fat milk
- 1 tsp bicarbonate soda
Method
- Preheat oven at 180°C. Line a loaf tin with baking paper.
- Combine oil, sugar, eggs & mashed bananas in large bowl.
- Add flours, mix well until combined.
- In a cup dissolve bicarbonate of soda into milk. Add to mixture, mixing until combined.
- Pour into loaf tin baking for 50 minutes or until golden brown.
A handy tip: For banana muffins throw in some sultanas, then pour mixture into a lined muffin tray and bake for 25 minutes.
