Oaty Weet-Bix slice

This no-fuss and deliciously nutritious snack is a great way to get kids inspired in the kitchen.

Ingredients

  •  3 Weetbix crushed
  • ¾ cup flour, wholemeal, self-raising
  • ¾ cup oats, rolled
  • 1 cup coconut, desiccated
  • 100 g butter melted
  • ¾ cup sugar, brown
  • ½ cup milk, any
  • ¾ cup sugar, icing
  • 2 tbsp cacao powder
  • 50 g butter
  • 1 tbsp water, boiling

Method

  1. Grease and line a slice tray with baking paper.
  2. Mix crushed Weet-Bix, flour, oats, coconut and brown sugar in a bowl and combine with milk and 100g melted butter.
  3. Press into slice tray and bake at 180C (170C fan forced) for 20 minutes.
  4. When slice is cool, ice with chocolate glaze icing.
     

    Icing

    1. Melt butter and add to blended icing sugar and cacao. Mix well and gradually pour in water, beating well. 
    2. Pour over slice and spread evenly.
    3. Refrigerate to set.
    4. Cut into 25 pieces.
