Simple Blueberry Pikelets

Ingredients

  • 1 cup self-raising wholemeal flour
  • 2 tbsp caster sugar
  • 2/3 cup reduced-fat milk
  • 1 egg
  • 3/4 cup frozen blueberries
  • extra virgin olive oil

Method

1. Add flour & sugar in large bowl
2. In jug, whisk milk & egg
3. Slowly add egg mixture into flour Whisk until combined. Fold through blueberries.
4. Grease frypan with olive oil & heat over medium heat. Scoop tablespoon of mix into pan, cooking for 1 minute till bubbles appear on the surface & golden underneath. Turn & cook till golden.
5. Transfer to plate & cover. Repeat with remaining batter, greasing pan between each batch.
